4 Tablespoons Blueberry Syrup
½ Cup lightly packed, fresh mint leaves (plus additional for garnish)
1 Cup white rum or (cachaca)
½ Cup fresh lime juice, plus lime slices for garnish
4 Cups ice
6 ounce club soda (more as needed)
fresh blueberries for garnish (optional)
½ Cup Blueberry Sugar, for rimming (optional)
Pour Blueberry Sugar onto a small rimmed plate. Slice the end off of a lime, one by one swipe the rim of each cocktail glass with the lime end, dip each rim into the sugar. Carefully pour 1 tablespoon of Blueberry Syrup into each glass.
In a large pitcher, add ½ cup mint leaves and ½ lime, gently muddle together. Add in the ½ cup fresh lime juice, 6 ounces club soda, ice and stir.
As an option to create a layered effect, carefully and slowly pour the mojito mix onto a spoon facing downward just touching the Blueberry Syrup in each glass. Garnish with fresh blueberries and additional mint leaves. Advise each person to stir before drinking and enjoy!
