6 Cups mixed greens
1 Cup blueberries
4 oz. crumbled feta cheese
¼ Cup Almonds
½ Red onion, thinly sliced, soaked in ice water, drained
For the Dressing:
1 Cup extra virgin olive oil
2 Tablespoons golden balsamic vinegar
2 teaspoons lemon juice
1 Tablespoon Blueberry Honey
1 teaspoon poppy seeds
Salt and fresh ground pepper to taste
Layer salad ingredients in large salad bowl.
Prepare dressing by combining all ingredients in a container with a lid; shake vigorously to combine. Toss salad with dressing and serve.
