Thomcord Grape Sheet Tart

Ingredients

  • 680 grams (1 ½ pounds) Thomcord or Concord grapes (see note below)
  • 140 grams (⅔ cup) granulated sugar
  • 2 ½ tablespoons cornstarch
  • 1 teaspoon fine sea salt
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon pure vanilla extract
  • Basic Pie Pastry Dough (see recipe below)
  • 3 tablespoons heavy cream
  • Flaky sea salt
  • 68 grams (½ cup) powdered sugar
  • 2 tablespoons whole milk
  • 15 drops liquid blue food coloring (optional)
  • 10 drops liquid red food coloring (optional)
  • White pearl sugar, dragées or other decorating sugars

Basic Pie Pastry Dough

      • 390 grams (2 ¾ cups) all-purpose flour, plus more for rolling and dusting
      • 2 tablespoons granulated sugar
      • 1 teaspoon fine sea salt
      • 226 grams (1 cup) unsalted butter, cut into ½-inch cubes and chilled
      • ⅔ cup ice-cold water
